Hello Chef Johnny, I'm a recent graduate of culinary school, a self proclaimed foodie, and I wanted to stop by to tell you that I admire your work. My being in the industry for such a short amount of time, three years now, its hard to open up about my sexuality in such a 'macho' environment. I come in, do the long hours, and leave feeling great! Wow. Thank you so much! And I know that feeling well. Ive been doing this for almost 17 years now. Luckily, in all the kitchens Ive worked in, my being gay had no affect whatsoever. I worked with really great, professional chefs and cooks that didn’t care about that stuff. As long as you show up 15 minutes early for your shift, beast your mise en place, bang out service, and work clean, no one can ever talk shit. Be the best and don’t settle for anything less. There will come a time when other cooks get so deep in the shits, and you’ll come by and dig them out.
